Carbohydrates are one of the fundamental classes of macromolecules found in nature (Walt D, 2012). The primary function of carbohydrates is to provide and store energy. Carbohydrate analysis and research is of prime importance in food and nutrition industry to maintain the quality and dietary value of food products. In addition, carbohydrate derivates, so called glycoconjugates play a crucial role in the development of vaccines. The separation and purification of carbohydrates using chromatography presents unique challenges to the scientists as they are structurally very similar, highly polar and carbohydrates themselves are non-chromophores (Linhardt R.J., Bazin H.G., 2001) However, with the advent of ELSD (Evaporative Light Scattering Detection), the purification of carbohydrates and their derivatives has become relatively easy.
